Most bagel chips were never bagels.
That sounds like a joke. It isn't. Read the back of almost any bag in the snack aisle and you'll find dough that was shaped and fried and seasoned until it tasted close enough. It's a chip doing an impression of a bagel.
Ours start as the real thing.
Every bag begins as a handcrafted bagel made at The Eccentric Bagel on Shelter Island, the same bagels people take the ferry for. We slice them and bake them a second time.
Why the second bake matters
Frying is faster. It's also why most chips leave a slick on your fingers and go soft in the bag by Thursday.
Baking takes longer and does something different. The second bake drives the moisture out slowly, so what's left is dense and dry all the way through. That's where the snap comes from: not a shattery, styrofoam crunch, but the kind you can hear across a room.
Double-baked, never fried. It's the single decision that shapes everything else about how these taste.
What we put on them, and what we don't
Olive oil and serious seasoning. Not a light dusting. We're not a light-dusting kind of operation.
No seed oils. That was a deliberate choice, and it's one of the first things people ask about. Everything on the label is something you could find in a kitchen and pronounce without practice.
Five flavors, none of them safe
Sea Salt. The one that proves the bagel underneath is good. Nowhere to hide.
Everything. Garlic, onion, black and white sesame, poppy, salt. The classic, done at full volume.
Garlic Herb Obsession. The name is a warning, not a description.
Cheddar Burst. Sharp and unsubtle.
Cinnamon Raisin Brown Sugar Crunch. The one nobody expects to love, and then does.
How people actually eat them
Straight from the bag, mostly. But they're sturdy enough to hold up to a thick dip without snapping, which is more than most crackers manage, and they've quietly become a charcuterie board regular. They're good alongside soup. They're good crushed over a salad.
They're mini, which means they disappear faster than you plan for.
That's the Eccentric difference. Nothing safe, nothing ordinary, nothing off the shelf.
